in a year or so, this will slip into the sea

Spice enthusiast. Sometimes scientist. All around old soul.

extra time = cooking time

Dinner with Will:

Warm Mushroom Salad
Basalmic/Rice vinegar reduction on top of baby arugula.

Mushroom and Spinach Quiche
Olive oil crust recipe from slashfood. A keeper.

Roasted Kabocha Squash Soup
Need to roast Kabocha much longer next time or at higher temp; pureed with apple/carrot/onion for sweetness

Rotini with chicken, portabella, and spinach pesto cream.
Roux-based sauced thickened too much; use more stock/wine instead of cream. Lacking in pizazz. Nutmeg flavor died on day 2.

Half-assed Chocolate Souffle
Even overbaked, can be saved by chocolate chips tucked into the batter.

****

Dinner with Alli (and Antony/Karen/Ed, sort of)

Pork shank soup with maitake mushrooms
The usual.

Carmelized onion and spinach quiche.
On a quiche roll. Olive oil crust again; overbaked though. Note to take quiche out immediately after egg rises.

Curried Cauliflower
Cauliflower released water like woah even with additional tomato/kabocha puree. Too much cumin weirdly worked well; probably should go light on fennel. Lack of cloves duly noted.

Coconut Kale

Should try with kale instead of mystery TJ’s mix. Lemon killed all of coconut’s delicateness, though perhaps that was just the asinine bitterness of the greens.

Panna Cotta

Uncannily similar to Thrify’s french vanilla ice cream. Go much lighter on vanilla extract and gelatin. Freezing it was a stupid idea.
